The powerful texture of the ‘Dornfelder’ variety makes it particularly suited for pressing juice. Its aromas are intense and characterized by ripe, dark berries such as blackcurrant, mulberry and blackberry, followed by plum cake and vanilla notes with a hint of mint. The juice has a pleasant sweetness, balanced out by fresh acidity and gentle, well-integrated tannins. As it matures in the bottle, the juice sheds surplus acid in the form of what is known as ‘tartar’, a sediment. This sediment will remain in the bottom of the bottle if you pour the juice carefully.
