Loison is a panettone with a pedigree - Loison has been making the Italian speciality for more than 75 years. Today, the family bakery, which dates back to 1938, is headed up by third-generation Dario Loison, who personally inspects all the ingredients that go into the company's top-line cakes to ensure quality is maintained. The cream and butter, used in the dough, is from local farms in the Italian mountains. The sea salt is hand harvested Italian Cervia sea salt – known as white gold – and the vanilla is of course from Madagascar. The panettones are also slow matured for flavour over 72 hours using sourdough yeast, resulting in a fluffy texture and rich flavour.
