Busiate are a kind of maccheroni which are formed by twisting strands of pasta dough to create a spiral shape which is hollow in the center and looks a bit like a telephone cord. Busiate are often served in and around Trapani with Pesto alla Trapanese, where the common base ingredients for this pesto are tomatoes, almonds, and garlic. Also it is recommended to serve this pasta with stewed tomatoes and eggplants.
