This is a very dry salt, which crunches under your teeth. The first notes are rather harsh, blunt, but the taste is very rich. The texture reminds us of the hostility of the lake Assal, that it originates from. The pearls are the result of natural salt water and wind: they acquired their perfect form through the backwash of the waves on sea shore, producing a "balls of snow".
Use 1st caliber as garnishing salt.
