This finely-ground chilli pepper is named after the French town where it’s grown - Espelette in South West France, just over the border from San Sebastián.

Espelette pepper is  as part of the curing process for the famous Bayonne hams. Traditionally also used for spicing honey, bread , chocolate and liquers. Goes especially well with fish stews and chicken dishes.
