Sanbaizu vinegar is a sweet dressing with savoury smoked fish notes. Sanbaizu is traditionally made with soy sauce, mirin and rice vinegar. The additional bonito in this recipe gives it extra umami depth. Use sanbaizu vinegar to dress steamed vegetables, and grilled seafood such as scallops or lobster. Its also amazing alonside fried salmon or tuna tataki.
