The dried tomatoes of Casa Marrazzo are obtained by drying the tomatoes, which are collected when they are ripe, sprinkled with salt and left to dry in the sun on a wooden frame for about a week. When the tomatoes are completely dehydrated, they are transferred to the production plant where they are rinsed and blanched in a solution of water and vinegar in order to sterilise them. It is after this long and meticulous process that dried tomatoes are ready to be preserved in oil, with the addition of garlic and oregano.
